Tuscan White Bean and Kale Stew

Ingredients
  

  • 2 tablespoons olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 2 carrots diced
  • 2 celery stalks diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 4 cups vegetable broth
  • 2 15 oz cans white beans, drained and rinsed
  • 1 14.5 oz can diced tomatoes
  • 4 cups chopped kale stems removed
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)
  • Crusty bread for serving

Instructions
 

  • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes.
  • Add the minced garlic, diced carrots, and diced celery to the pot. Cook for another 5 minutes, until the vegetables are tender.
  • Stir in the dried thyme, dried rosemary, and bay leaf, and cook for 1 minute until fragrant.
  • Pour in the vegetable broth, white beans, and diced tomatoes with their juices. Bring the mixture to a simmer.
  • Once simmering, add the chopped kale to the pot and stir until wilted.
  • Let the stew simmer for 20-25 minutes, allowing the flavors to meld together and the kale to soften.
  • Season with salt and pepper to taste.
  • Serve the stew hot, garnished with grated Parmesan cheese if desired, and with crusty bread on the side.
