Turkey Chili

Ingredients
  

  • 1 tablespoon olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 jalapeño pepper seeded and diced
  • 1 pound ground turkey
  • 1 bell pepper diced (any color)
  • 1 can 15 oz diced tomatoes
  • 1 can 15 oz tomato sauce
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn kernels fresh, canned, or frozen
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional toppings: shredded cheese sour cream, sliced green onions, chopped cilantro, avocado slices, tortilla chips

Instructions
 

  • Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook until softened, about 5 minutes.
  • Add the minced garlic and diced jalapeño pepper to the pot, and cook for an additional 2 minutes until fragrant.
  • Add the ground turkey to the pot, breaking it apart with a spoon, and cook until browned and cooked through, about 5-7 minutes.
  • Stir in the diced bell pepper, diced tomatoes, tomato sauce, kidney beans, black beans, corn kernels, chili powder, ground cumin, smoked paprika, salt, and pepper.
  • Bring the chili to a simmer, then reduce the heat to low and let it simmer uncovered for about 20-30 minutes, stirring occasionally, to allow the flavors to meld together and the chili to thicken.
  • Taste and adjust the seasoning as needed, adding more salt and pepper if desired.
  • Ladle the hot Turkey Chili into bowls and garnish with your favorite toppings, such as shredded cheese, sour cream, sliced green onions, chopped cilantro, avocado slices, and tortilla chips.
  • Serve the chili piping hot, and enjoy the comforting flavors of this delicious dish!
