The Vegetarian Panini is a delicious and satisfying sandwich filled with a variety of flavorful and nutritious ingredients. Ingredients
  

  • 4 slices of crusty bread such as ciabatta, sourdough, or focaccia
  • 1 medium zucchini thinly sliced lengthwise
  • 1 red bell pepper sliced into strips
  • 1 yellow bell pepper sliced into strips
  • 1 small eggplant thinly sliced
  • 1/2 red onion thinly sliced
  • 1/4 cup sun-dried tomatoes drained and chopped
  • 1/2 cup baby spinach leaves
  • 4 slices of provolone cheese
  • 4 tablespoons basil pesto
  • Olive oil for brushing
  • Salt and pepper to taste

Instructions
 

  • Preheat the Panini Press: Preheat a panini press or grill pan over medium heat.
  • Prepare the Vegetables: Brush the sliced zucchini, bell peppers, eggplant, and red onion with olive oil, then season with salt and pepper to taste.
  • Grill the Vegetables: Place the prepared vegetables on the preheated panini press or grill pan. Cook for 3-4 minutes on each side, or until tender and lightly charred. Remove from heat and set aside.
  • Assemble the Panini: Lay out the slices of crusty bread on a clean work surface. Spread a tablespoon of basil pesto on each slice of bread.
  • Layer the Ingredients: On two slices of bread, layer the grilled vegetables, sun-dried tomatoes, baby spinach leaves, and slices of provolone cheese.
  • Top with Remaining Bread: Place the remaining slices of bread on top of the filling to form sandwiches.
  • Grill the Panini: Brush the outer surfaces of the sandwiches with olive oil. Place the sandwiches on the preheated panini press or grill pan. Grill for 3-4 minutes on each side, or until the bread is golden brown and crispy, and the cheese is melted.
  • Slice and Serve: Remove the grilled panini from the press or grill pan. Use a sharp knife to slice each sandwich in half diagonally. Serve hot and enjoy!
