Meatball Soup

Ingredients
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1 egg
- 2 cloves garlic minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 onion diced
- 2 carrots diced
- 2 celery stalks diced
- 6 cups beef or chicken broth
- 1 can diced tomatoes
- 1 cup small pasta such as ditalini or elbow macaroni
- Fresh parsley chopped, for garnish
Instructions
- In a large bowl, combine the ground beef, breadcrumbs, egg, minced garlic, dried oregano, dried basil, salt, and pepper. Mix until well combined, then shape the mixture into small meatballs.
- Heat the olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery, and cook until softened, about 5 minutes.
- Add the meatballs to the pot and cook until browned on all sides, about 5-7 minutes.
- Pour in the beef or chicken broth and diced tomatoes, and bring the soup to a simmer.
- Stir in the small pasta and continue to simmer until the pasta is cooked and the meatballs are cooked through, about 10-12 minutes.
- Season the soup with additional salt and pepper to taste, if needed.
- Ladle the soup into bowls and garnish with chopped fresh parsley before serving.
