Chicken Noodle Soup
Denise's original home made chicken soup. This is the soup that started it all for me. Made with love and enjoyed round the table frequently, it is what started my mission to create this site! Check out the notes and summary for more to the story.

- 1 medium onion
- 8 carrots
- 3 stalks of celery
- 4 boneless chicken breasts
- 3 boxes of chicken broth
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp rosemary
- 1/2 tsp thyme
- 1/2 tsp sage
Chop the carrots, celery and onion
Saute' veggies in olive oil over medium heat
While vegetables are cooking, cut chicken into bite size pieces
When vegetables start to soften, add salt, pepper, and herbs and stir together
Add chicken, stir well, and then add broth
Bring to a boil over high heat
Turn heat to low and cover
Stir occasionally and cook for about 1 1/2 hours
Serve over noodles!
- If you want to save time and make this even easier, look for vegetables already cut in the produce aisle.
- Another option to to place chicken breasts in whole and then taking out after about 30 minutes to shred with a couple of forks on a cutting board. Then place back into the soup pot to finish cooking. Makes a nice texture.
- Tastes great with grated cheese or a little tomato sauce also!
- Freeze extra soup for leftovers
