Ingredients
  

  • 2 tablespoons vegetable oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 cups cooked chicken shredded
  • 2 cups cooked pulled pork or BBQ pork, shredded
  • 1 can 14 ounces diced tomatoes
  • 1 can 14 ounces whole kernel corn, drained
  • 1 can 14 ounces lima beans, drained
  • 1 cup okra sliced (fresh or frozen)
  • 2 cups potatoes peeled and diced
  • 4 cups chicken broth
  • 1/2 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon hot sauce adjust to taste
  • Salt and black pepper to taste
  • 1/2 cup fresh or frozen peas
  • Chopped fresh parsley for garnish (optional)

Instructions
 

  • In your Dutch oven, heat the vegetable oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent.
  • Stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant.
  • Add the shredded chicken and pulled pork to the pot. Mix well with the sautéed onions and garlic.
  • Stir in the diced tomatoes (with their juice), whole kernel corn, lima beans, sliced okra, and diced potatoes.
  • Pour in the chicken broth, ketchup, Worcestershire sauce, apple cider vinegar, and hot sauce. Stir to combine.
  • Bring the stew to a boil, then reduce the heat to low, cover the Dutch oven, and let it simmer for about 30-40 minutes, or until the potatoes are tender.
  • Taste the stew and adjust the seasonings with salt and black pepper as needed.
  • About 10 minutes before serving, stir in the fresh or frozen peas and continue to simmer until they are cooked through.
  • Serve the Brunswick Stew hot, garnished with chopped fresh parsley if desired.
