  • 2 tablespoons butter
  • 1 onion diced
  • 2 cloves garlic minced
  • 3 cups broccoli florets
  • 3 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • Optional toppings: crumbled bacon extra cheese, chopped chives

Instructions
 

  • In a large pot, melt the butter over medium heat. Add the diced onion and garlic, and sauté until softened and fragrant.
  • Add the broccoli florets to the pot and stir to combine with the onion and garlic mixture.
  • Pour in the chicken or vegetable broth, then cover and simmer for about 10-15 minutes, or until the broccoli is tender.
  • Using an immersion blender or regular blender, carefully blend the soup until smooth. Return the soup to the pot if using a regular blender.
  • Reduce the heat to low and stir in the heavy cream and shredded cheddar cheese until the cheese is melted and the soup is heated through.
  • Season with salt and pepper to taste, then ladle the soup into bowls.
