  • 2 cloves garlic minced
  • 2 cans 28 ounces each whole tomatoes (preferably San Marzano)
  • 1 can 14 ounces diced tomatoes
  • 1/4 cup fresh basil leaves chopped (plus extra for garnish)
  • 1 teaspoon dried oregano
  • 1 teaspoon sugar
  • Salt and black pepper to taste
  • 4 cups vegetable or chicken broth
  • 1/2 cup heavy cream optional, for a creamy version
  • Grated Parmesan cheese for garnish (optional)
  • Croutons for garnish (optional)

Instructions
 

  • In your Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent.
  • Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
  • Pour in the whole tomatoes (with their juice) and the diced tomatoes. Crush the whole tomatoes with a wooden spoon or your hands to break them down into smaller pieces.
  • Stir in the chopped fresh basil, dried oregano, sugar, salt, and black pepper. Mix well.
  • Add the vegetable or chicken broth to the pot and stir to combine all the ingredients.
  • Bring the soup to a boil, then reduce the heat to low, cover the Dutch oven, and let it simmer for about 30 minutes, allowing the flavors to meld.
  • Use an immersion blender to carefully blend the soup until it reaches your desired consistency. Alternatively, you can transfer the soup in batches to a regular blender and blend until smooth. Be cautious with hot liquids in a blender.
  • If you prefer a creamy version, return the soup to the Dutch oven and stir in the heavy cream. Heat the soup over low heat until warmed through.
