  • 1 cup dried green or brown lentils rinsed and drained
  • 1 onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 6 cups vegetable broth
  • 1 can 14 oz diced tomatoes
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley chopped, for garnish
  • Lemon wedges for serving

Instructions
 

  • In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced onion, carrots, and celery, and cook until softened, about 5 minutes.
  • Add the minced garlic, ground cumin, ground coriander, and smoked paprika to the pot, and cook for another minute until fragrant.
  • Add the rinsed lentils, vegetable broth, diced tomatoes (with their juices), and bay leaves to the pot. Bring the soup to a boil, then reduce the heat to low and let it simmer, covered, for about 25-30 minutes or until the lentils are tender.
  • Once the lentils are cooked, remove the bay leaves from the soup and discard them. Season the soup with salt and pepper to taste.
  • Ladle the soup into bowls and garnish with chopped fresh parsley. Serve with lemon wedges on the side for squeezing over the soup before eating.
